Chapter 2 of Giglio's story: how the motto of his hometown became the pizza that bears our restaurant's name.
In the first chapter we met Giglio Onelio Francini, a fourth-generation pizzaiolo born in Castellammare di Stabia. Today the story continues with the pizza that bears our restaurant's name: the Sonrisa.

Chapter 1
Giglio Onelio Francini: four generations of Neapolitan pizza, now DOC certified
«Post fata resurgo»: the motto of a city
Castellammare di Stabia has a Latin motto: «Post fata resurgo», «after destruction, I rise again». Ancient Stabiae was destroyed by the eruption of Vesuvius in 79 AD and, over time, rose again.
“Post fata resurgo”
The Sonrisa pizza was born from that motto. Giglio wanted a pizza that told the story of his city and reminded him of something he has never forgotten: never give up, because after a fall you get back up stronger.

A pizza that tells a city
Every ingredient of the Sonrisa is linked to Castellammare. Together they tell of Vesuvius, the sun, the earth, the lava and the scents of a childhood.
Yellow cherry tomato cream — the sun shining over the Gulf of Naples.
Semi-dried red tomatoes — the lava of Vesuvius, the volcano that destroyed Stabiae.
Taggiasca olives and taralli with almonds and pepper — the earth, which bears fruit again after the fire.
Basil cream — the scents of Giglio's childhood.
Anchovies and buffalo mozzarella — the sea of Castellammare and the tradition of Campania.
Falling and rising stronger
The Sonrisa is not just a recipe: it is a way of looking at life. Every time it comes out of the oven it is a reminder that, like Castellammare, you can always start again.
If you want to taste Castellammare in a pizza, the Sonrisa is waiting for you at our Neapolitan pizzeria in Arrecife, Lanzarote.
